I recently got to 240 (with a couple seconds at 244) while towing a heavy trailer uphill on the interstate in 89F weather - 4000 rpm in 3rd at 55 mph. So yeah, 250 isn’t normal. With switch on temperature pegged all the way hot (260 +) so I know gauge is capable of going higher. New temperature sensor and still reads about 160 ish. Has new 195 degree thermostat. The temps of the water jackets and block in general is on the other side (below) the stats. One for the ECU and one for the dash. Some have one at the thermostat and one in the radiator. I know mine has two, Z18xe. The temp gauge is usually designed to sit bang in the middle once warmed up.
